Hello and welcome to another episode of Erin’s Eats! No, I’m kidding. This is just my blog, but we will go over another delicious recipe today! This oatmeal recipe is one of my favorite breakfast meals. I probably make it at least once a week. It does take a bit longer than pouring a bowl of cereal, but it definitely does not take as long as making a bacon and egg breakfast. Plus, oatmeal is incredibly nutritious and rich in antioxidants!

Easy Start

To begin this oatmeal recipe, you want to pour 2 cups of milk into a medium-sized pot. Heat the milk on medium heat. I keep lactose-free milk in my fridge so that’s what I use in this recipe. However, you can use full-on dairy milk and the results will be just as good. As far as nut milk goes, I am not too sure.

Add in The Flavor

Next, add in 4 tablespoons of brown sugar (may substitute honey if you wish), 1 teaspoon of cinnamon, and 2 teaspoons of vanilla. Listen, I use a lot of vanilla extract. So, I usually buy it in large quantities. This is one of the reasons I buy Mexican vanilla because you get a lot more bang for your buck. My Mama was a cake baker, and she always had at least two bottles of this kind of vanilla lying around. Forgive me if I overuse vanilla, I’m a baker’s daughter. 

Now, once your milk is starting to steam, add in 1 cup of old fashioned oats and 2 chopped bananas. You can also use quick oats in this oatmeal recipe, it will just be mushier. I use two bananas, but that’s because I really like bananas. You might use fewer bananas if you don’t want so much banana flavor.

Cook and Serve

Cook the oatmeal for about 7 minutes, or until it reaches your desired consistency. I prefer my oatmeal thick, so sometimes I cook it for more minutes. You want to serve up your oatmeal immediately once it’s done. This recipe isn’t one to be left out and then eaten later. Trust me. The oatmeal will congeal, and you don’t want that. 

Serve your oatmeal hot, and add some extra bananas or even blueberries on top! Hope you enjoy!

Oatmeal Recipe with Banana

Looking for an easy healthy breakfast? This is one of my favorites. While I love bananas, you could really put any fruit of your choosing in this recipe! It is perfect for cold fall mornings, and is perfect for a crowd if you double the ingredients!

Ingredients

  • 2 cups Milk
  • 4 tbs Brown Sugar
  • 2 tsp Vanilla
  • 1 tsp Cinnamon
  • 1 cup Old Fashioned Oats
  • 2 Bananas

Directions

  1. Heat milk in a medium-sized pot on medium heat
  2. Add brown sugar, vanilla, and cinnamon to the milk
  3. When the milk starts to get steamy (before it boils), add in the oats and chopped banana
  4. Allow to cook for about 7-8 minutes, or until it reaches your desired consistency
  5. Serve immediately and top with extra banana bits!
